Here’s to photographing banana bread in your pajamas and penguin socks while standing on top of your unmade bed.

Ricotta Banana Bread.

Makes one loaf.


  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon grated nutmeg
  • 1/2 cup whole milk ricotta
  • 2 eggs
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk (almond, coconut, dairy)
  • 3 overripe bananas, mashed


Preheat the oven to 350 degree Fahrenheit and butter or grease a loaf pan. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. In a separate bowl, whisk together the ricotta, eggs, sugar, vanilla milk, and bananas. Add the dry ingredients to the wet ingredients and mix together until well combined, Pour into the prepared loaf pan and bake in the preheated oven for 50-60 minutes, or until cooked through and golden brown.
